Which allergens must a restaurant declare?

In the EU, Regulation 1169/2011 lists 14: gluten-containing cereals, crustaceans, eggs, fish, peanuts, soybeans, milk, tree nuts, celery, mustard, sesame, sulphites above 10 mg/kg, lupin and molluscs. The UK uses the same 14.

Do I have to print the allergens on the menu?

No. The information must be available before the order, but it can be in writing (menu, chart, sign) or given by staff, as long as a written notice tells guests where to find it. A printed chart kept at the counter is a common way to meet it.

What about traces and cross-contamination?

The 14-allergen declaration covers ingredients used on purpose. Possible traces from shared fryers, boards or surfaces are voluntary information: say so in a note, as the chart does, and train staff to answer.

How often should I update the chart?

Every time a recipe, a supplier or a ready-made ingredient changes. Update the dish here and print again, or keep allergens directly on the menu items so the QR menu always shows the current version.
